Last night was like many nights lately around our home. After the hustle and bustle of homeschool and a playdate, I peered in the fridge with zero plans for dinner. Then in walked Sausage Stuffed Crescent Roll sandwiches!
Ever since May, I have totally been slacking in the grocery department. Um….who or what can I blame…..thinking….. dang, I guess it is me! Ugh.
Anyway, in my effort to wish food into our refrigerator, nothing much stared back at me. I just spent almost $90 with Wal-Mart Grocery pick up! How could this be? (Granted some of that was household and personal care items.) How could the only real food we have be four pounds of chicken breasts, crescent rolls, a tube of sausage and some cottage cheese?!?
I knew that I did not want to cook that much chicken since my husband had potential work obligations and there was no guarantee he would be home for dinner. (And honestly, I really didn’t want to.) So, I contemplated taking the kids to a nearby cheap hamburger drive-thru. Thankfully, I was able to talk myself down off the fast food ledge when I remembered how awful I felt after falling prey to this just last week.
(Did I mention summer seems to have vexed me with a cooking and grocery shopping aversion?!?)
So, I decided that surely I could make magic with the Crescent Rolls. Not the healthiest option, but hey it would be healthier than any drive-thru nearby.
Google to the rescue!!!!
Enter Sausage Stuffed Crescent Roll Sandwiches 🚶🏻♀️
My Google search resulted in like a kabillion (yes, I know this is not a real number) crescent roll recipes, but I stumbled upon a post boasting something like 100 best crescent roll recipes. This led me to an awesome post about Cheesesteak Crescent Rolls on Favorite Family Recipes. As yummy as this article sounded, I certainly didn’t have the ingredients in my barren fridge to make it. BUT it did totally inspire me to make my own Crescent Roll Creation.
I mean how can you go wrong with ground sausage, cheese, and crescent rolls?!?
So, I rolled up my sleeves and prayed that using two of the three main ingredients in our fridge would result in a meal that my family would eat.
Now They Have A Name – Sausage Stuffed Crescent Roll Sandwiches
Good news, these little things have now earned a name since they turned out soooooo delicious!

Not only were these little guys delicious, but they were SUPER simple to throw together. Best of all, they were a hit with the family!
Nobody Was Harmed Taste Testing This Recipe
I will freely admit that I was licking the spoon after I stuffed the rolls and had them in the oven. So I felt pretty confident that no one was going to gag or throw their sandwich at me at meal time.
However…. I do have a shameful confession.
The original recipe that inspired me called for a block (8oz) of cream cheese, not cream cheese and sour cream.
I thought surely I had enough cream cheese. Who doesn’t keep like 3 blocks of cream cheese in their fridge at a time? Wait, maybe I am the only one that loves cream cheese frosting. Anyway, as I confidently started pulling my handful of ingredients together, I managed to find two previously opened packages of cream cheese in Ziploc bags. Then I opened one, the one I forgot to label with the opened date. It was COMPLETELY covered with mold…I mean like the green, black, hairy, unidentifiable kind. UGH! 😳
I hang my head in shame. Did I really just admit that? I seriously thought I had just cleaned my fridge out only like a couple weeks ago. Did I dream that or did I simply just overlook it? Surely some of you moms can relate to this, right?
Okay, okay. Enough of me sharing way too much. Let’s get to the deliciousness that resulted from my barren fridge.
Sausage Stuffed Crescent Roll Sandwiches
Ground sausage, cream cheese, sour cream, Colby jack cheese, stuffed into Crescent rolls to make a delicious and quick weeknight meal.
- 1 tbsp butter (whatever you have)
- 1/4 cup sweet yellow onion diced (really any onion)
- 1/4 cup green bell pepper diced
- 1 pound Jimmy Dean Regular ground sausage
- 4 ounce cream cheese
- 1/2 cup sour cream
- 8 slices Colby jack cheese
- 2 pkgs Crescent Rolls
Preheat oven to 375-degrees.
In a large skillet over medium heat, saute your diced onion and bell pepper in the butter until softened.
Add the ground sausage. Cook until brown.
Drain the extra fat from the pan.
Cube the cream cheese. Then add the cream cheese and sour cream to the ground sausage mixture on the stove.
Heat until the cream cheese is melted and the ingredients are well mixed. Then remove from heat.
Unroll the Crescent rolls onto an ungreased cookie sheet. Divide each package into 4 rectangles, pinching the triangle perforations so they are gone. (or Use the Crescent Roll Sheets)
Place a slice of Colby jack cheese on one side of each of the 8 crescent roll rectangles.
Scoop ~ 1/3 cup of the cooked sausage mixture onto each slice of Colby jack cheese. (The mixture divided will "stuff" all 8 crescent roll rectangles.)
Once all of the sausage mixture is divided onto the cheesy crescent rolls, fold over the other half of the crescent roll that is empty. Then pinch/smush the edges closed the yumminess does not leak out in the oven.
Place cookie sheet with the crescent roll pouches and cook until golden brown. (~15-20 minutes)

You Should Totally Try These
I can see these being something you could eat for breakfast, lunch, dinner or even an appetizer.
If you are having one of those nights, like I was, make your own similar creation for a family throw together dinner. The basics of this recipe should work with pretty much anything yummy you want to throw in. Just remember, it all has to fit in that tiny little sandwich roll!
Think shredded chicken, beef, cheddar, mozzarella, ranch seasoning….the ideas are endless! Just stick with the same quantities mentioned in the Stuffed Saugage Cresent Rool recipe and the ratios will work out.
Every family is unique, embrace it and throw in those ingredients that your hubby and kids love!
